1 (15.5-oz) can cannellini beans,

½ tsp dried basil

2 tbsp minced fresh parsley

Directions:

Heat oil in a pot and sauté onion, carrot, garlic, mushrooms, and bell pepper for 5 minutes. Stir in capers, zucchini, tomatoes, broth, salt, and pepper. Bring to a boil, then lower the heat and simmer for 20 minutes. Add in beans, and basil. Simmer an additional 2-3 minutes. Serve topped with parsley.

Sweet Potato, Corn And Jalapeno Bisque

Ingredients:

4 ears corn

1 seeded and chopped jalapeno

4 cups vegetable broth

1 tablespoon olive oil

3 peeled and cubed sweet potatoes

1 chopped onion
