2 tablespoons avocado oil

¼ white onion, finely chopped

Pinch sea salt

2 garlic cloves, minced

1 cup quinoa

Juice of ½ lime

1 tablespoon ground cumin

1 teaspoon chili powder

¼ teaspoon paprika

2 cups low-sodium vegetable stock

1.Preheat the oven to 325°F.

2.Heat the oil in a large Dutch oven over medium heat.

3.Add the onion and salt. Sauté for 2 to 3 minutes, stirring frequently, until the onion is translucent.

4.Add the garlic, quinoa, lime juice, cumin, chili powder, and paprika. Sauté for 2 minutes.

5.Add the stock and cover with a lid.

6.Bake for 25 minutes, or until the quinoa is cooked, then serve.
