This hearty dish is almost a meal in itself. It is tasty, filling, and energizing.

1 cup dried black turtle beans, sorted, washed, and soaked with 3 cups water overnight

1-inch square piece kombu

1 bay leaf

1 tablespoon sesame oil

1 clove garlic, minced

1 cup diced onion

¼ cup diced celery

¼ cup diced carrots

¼ cup fresh or frozen corn kernels

1 teaspoon cumin (optional)

sea salt, to taste

dash of shoyu

cilantro or parsley, for garnish

1. Drain beans, rinse, and discard soaking water. Place beans, kombu, and bay leaf in a heavy pot. Add water to cover 1 inch above the beans.

2. Slowly bring to a boil, skimming off white foam as it arises on the surface.

3. Place flame deflector underneath the pot, cover, reduce flame to medium-low, and simmer for 45 minutes or until beans become tender. If the liquid gets low during cooking, add some more water to cover the beans.

4. Heat oil in a skillet and sauté garlic, onion, celery, and carrots for a few minutes. Add sautéed vegetables to the bean pot.

5. Add corn, cumin, sea salt, and shoyu. Continue to simmer for 10 minutes until vegetables become tender.

6. Adjust the seasonings. Remove bay leaf and serve with garnish.
