★ For the pico and guacamole, it’s super-important to let the lemon juice and salt sit with the grated onion and jalapeño before adding the rest of the ingredients. It helps to mellow the harshness of the raw onion and starts to break down the oils in the jalapeño, resulting in more melded flavors.

★ I always use fresh lemons and squeeze them just before using in this recipe. Frozen lemon juice or juice from concentrate won’t be the same, I guarantee. If your lemons seem underripe and hard, try microwaving them for 10 to 20 seconds, then roll them under your palm to release the juice from the fibers inside before cutting them open.

★ If you’ll be storing the guacamole in the fridge, save one of the avocado seeds and pop it into the guacamole, then press plastic wrap directly against the surface of the guacamole, covering it completely, to avoid browning.

★ If you like your pico de gallo and guacamole spicy, leave in more of the jalapeño seeds (or remove all the seeds, if you prefer things totally mild).

★ No need to go crazy picking the leaves off the stems before chopping cilantro; give the whole bunch a good rinse and shake, then chop it from the top down, stopping when you reach the thicker stems.

★ Save the extra taco seasoning for Taco Tuesday or use it in my Super Veggie Chili con Corny.
