HOMINY

Hominy is treated, soaked, deskinned corn kernels. It is readily available in most supermarkets, or try making it yourself with the following recipe.

4 heaping tablespoons baking soda

4 quarts water

8 cups dried corn kernels

Dissolve soda in water, using a ceramic or enameled pan (not metal). Add the corn, adding more water if necessary to cover. Soak overnight. The next day, bring to boil, reduce heat, and simmer until the hulls loosen from the grain, about 3 hours. Drain corn and wash several times, until soda taste is completely gone. Rub hulls off between the palms of your hands.

Hominy may be frozen, canned (using pressure canning techniques for low-acid foods), or dried in a very low oven and kept in airtight containers. To cook, cover with boiling water and simmer gently about four hours, or until tender.
