EASY EGG FLORENTINE

Preheat the oven to 180°C/gas mark 4. Lightly grease a large ramekin dish or teacup with butter. Defrost 50g frozen spinach, squeeze out all excess water, season with salt and freshly ground black pepper, and spoon into the base of the ramekin dish, making a slight well in the centre. Break 2 organic eggs into the dish, dot with more butter, pour over 1 tablespoon cream and sprinkle with 1 tablespoon freshly grated vegetarian Parmesan. Bake in the oven for 10 minutes until the edges of the egg whites are just beginning to set and the yolks are firm. Serves 1
