Turkey Hand Pies

Makes 6 hand pies

Don’t use a turkey roll or a pressed loaf of turkey meat for these delicious and delicate hand pies. You’ll need the real deal—that is, roasted turkey breast meat, often available at the butcher or deli counter of large supermarkets across North America. Or save this recipe for the leftovers from a holiday turkey.

It’s crucial that the pie crusts be at room temperature. If they’re even slightly cold they’ll crack as you work with them. We take them out of the fridge the morning of the day we want to make the hand pies for a mid-afternoon snack or dinner.
