My husband used to live in the Midwest, and he also traveled quite a bit in the South as a youth and acquired a taste for okra. Being a solid Pacific Northwest girl myself, okra is just not a grocery or garden staple around here. Always curious about what draws folks to certain foods, I was particularly fascinated by my husband’s fondness for okra. He is prone to poor gut health and ulcers due to a couple of factors in his childhood and adulthood. Okra is a member of the mallow family and contains healing, soothing mucilage that can have profound benefits for the digestive system. As such, okra is the perfect food for those plagued with stomach complaints of heat and burning.

When brainstorming recipes for this book, I considered gumbo or pickled okra, but settled on a somewhat naughty treat: fried okra. Because who doesn’t want a naughty treat that isn’t so naughty after all? I use frozen okra because that is what is regularly available; no need to thaw them before preparing this recipe. This simple coating browns to a nice golden hue while the okra cooks, resulting in a crunchy morsel without the slimy, mushy texture sometimes attributed to this vegetable. Dip it in garlic aioli for added yummy naughtiness.
