Chickpea and vegetable korma

serves 16 (4 × 4-serve meals)

preparation 45 minutes, plus 15 minutes standing time

cooking 30 minutes

4 red onions, quartered

125 ml (4 fl oz/½ cup) macadamia oil

1 full quantity Korma paste

500 ml (17 fl oz/2 cups) vegetable stock

600 ml (21 fl oz) cream for cooking

1.6 kg (3 lb 8 oz) tinned chickpeas, drained and rinsed

1.5 kg (3 lb 5 oz) cauliflower florets, broken into 3 cm (1¼ inch) pieces

800 g (1 lb 12 oz) green beans, trimmed and halved

50 g (1¾ oz/½ cup) toasted almond flakes (optional)

rice, naan or poppadoms, to serve
