• Heat the burrito mixture in a small skillet, then spoon it onto the lettuce leaves. Add the avocado and salsa, and roll up.

• Combine the vegetables and garlic with the olive oil, lemon juice, and salt and pepper. Add the olives and herbs. Toss together and add anything else you can think of, such as artichoke hearts, red bell peppers, or red onions. Roll up the mixture in the lettuce leaves and you have a salad in a wrap! (You can also use the rice or hemp tortillas in place of the lettuce leaves.)
