When we think ‘eggs’, we generally refer to hen’s eggs, but the eggs of a few other feathered species may come your way:

Ostrich eggs

You may not be in the habit of cracking an ostrich egg for a quick meal but, if you do happen upon one, you would most probably use it to make scrambled egg or an omelette. Just invite about ten mates around to help you consume that one egg, as that is how far it will take you. If you want to hard-boil your ostrich egg, you should have time on your hands as it will take more than an hour for the yolk to set. Then, haul the hammer out of your toolbox to crack the shell, quarter and slice the egg, and serve it on toast, with or without a sauce. For a wine to drink with it, just follow the suggestions for hens’ eggs in this chapter. Ostrich eggs may be exotic and rich, but they still pair with the same wines as hens’ eggs.
