If you can’t get good tomatoes, try shaking a couple of olive leaves (you can buy them dried) through the drink – it’ll give a similar light, piquant note.

◁ VERMOUTH COCKTAIL

Vermouth is brilliant to have in the house, not just because it’s so suited to sipping before or with dinner. Cocktails such as this are excellent to have in your arsenal as they help you use up your vermouth while it’s still fresh (always store it in the fridge, too). I make my own lemon blossom syrup while my tree is in bloom (don’t use all the blossom, or you’ll get no lemons!), but it isn’t essential – just use an additional lemon zest. You can also make your own raspberry syrup: rest a punnet of raspberries in a fresh batch of sugar syrup as it’s cooling, then press it all through a sieve. Or, there are some very decent ones on the market now.
