English pale ale is made with traditional English ingredients: English 2-row pale malt, English specialty malts, and the famous English hop varieties, East Kent Golding and Fuggle. A few non-British hop varieties are acceptable substitutes—British Columbian Golding, Styrian Golding, domestic Golding, or Willamette. The hops are so important to the character of a pale ale; when it is made of a combination of ingredients from England and America, I generally use the hops as the deciding factor on whether to call it English or American. The emphasis of English pale ale is on hop bitterness rather than hop flavor or aroma.

Unbeknownst to many Americans, the English frequently add sugar during the boil. English pale ale also has a relatively low revel of carbonation, alcohol, and generally has a thinnish body.
