1 To peel the skate of its gritty skin, lay it on a clean cutting board, dark side up. Cut a lengthwise slice about 1 inch (2.5 cm) from the edge to expose the inner edge of the bones inside. Use a long skinning knife, if possible, to reach all the way through the fillet with a single cut.

2 Cut away the slice and discard.

3 Turn the skate wing over so its light side is up. Grasping the edge with your non-writing hand, insert the knife about 1 inch (2.5 cm) from the end and cut from the inside edge to the curved edge, cutting the flesh from the skin underneath, keeping the knife flat.
