Simple Vegetable Sauté

One of the perks of being a chef in high-end restaurants is having an abundance of wonderful ingredients, including bushels of vegetables. My favorite job included creating a side dish of 11 vegetables. It helped me develop an appreciation for the visual impact of multiple colors and shapes on the plate. You eat with your eyes first, so in my house, vegetable sautés are on the menu almost daily, either as a main course or an accompaniment to a lovely piece of fish.

SERVES 4

PREP 15 minutes

COOK 15 minutes

½ cup water

1 cauliflower head, cut into small florets

2 carrots, peeled and cut into ½-inch chunks

2 red bell peppers, seeded and cut into strips

1 bunch asparagus, woody ends removed and cut into 3-inch pieces

2 tablespoons butter
