The Easternmost House’s elderflowers are in full bloom, bursting romantically through the ruined farm buildings at the far end of the track, so I must strike while the iron is hot and make some elderflower cordial for another fund-raising summer Pimm’s party. It doesn’t really matter what the specific cause being fund-raised for is or was, as there is always a need for what I call ‘unprofessional catering’. We have people to lunch, people to stay, people to pacify and people to please. Home-made elderflower cordial is the rural elixir that oils the wheels of all these scenarios.

After the infamous blue/orange curacao mix-up with the home-made Pimm’s, still referred to by some as the Affair of the Green Pimm’s, people may be extra-cautious and go for the safe elderflower option this time. It is therefore imperative that I make the elderflower cordial correctly. The only thing I know about making elderflower cordial is that the professionals at Belvoir Castle put citric acid in it. Everyone round here, except me, will know the proper method, so it should be easy. I have to go to Halesworth anyway, to order the elusive orange curacao for the home-made Pimm’s, so I shall buy some citric acid and get the whole operation out of the way today. Job done.
