CHAPTER 7 CHICKEN

APPLE CHICKEN

(TOTAL COOK TIME 1 HOUR 10 MINUTES)

INGREDIENTS FOR 10 SERVINGS

THE INGREDIENTS

Uncooked bacon, chopped (8-ozs, 227-gms)

Flour – ½ cup

Seasoning salt – 1½ tablespoons

Boneless chicken, cut into chunks (1.5-lbs, 0.7-kgs)

2 onions, peeled and quartered

Red potatoes, cut into chunks (2.5 -lbs, 1.13-kgs)

Baby carrots (1-lbs, 0.45-kgs)

Apple juice – 1 cup

Cheese, shredded – 1 cup

METHOD

Prepare your campfire and Dutch oven for cooking at 320°F (160°C).

You will need a 12-ins (30.5-cms) Dutch oven with 11 coals underneath it, arranged in a checkerboard pattern, and 17 on its lid.

First, cook the bacon in the Dutch oven until crispy. Remove the bacon, leaving the bacon fat behind.

In a large ziplock bag, combine the flour with the seasoning salt.

Add the chunks of chicken to the bag, and shake to coat evenly.

Add the chicken to the bacon fat in the Dutch oven and brown all over.

Remove the chicken from the Dutch oven.

To the now-empty Dutch oven, add the onion, potatoes, and baby carrots. Return the chicken from Step 7 and the bacon from Step 3 to the veggies.

Pour the apple juice over the top of the ingredients and cook for 45 minutes.

Remove the lid, shatter with the grated cheese and cook for another 10 minutes.

Serve and enjoy.
