Crepes
1¼ cups whole milk 2 eggs
1 tablespoon vegetable oil 1 cup flour
1 tablespoon granulated sugar ½ teaspoon salt Butter, for the pan
Bananas Fireball
½ stick (4 tablespoons) butter ½ cup granulated sugar ¼ cup dark brown sugar 3 bananas, sliced into coins ½ cup bullshit cinnamon-flavored whiskey
1 I guess you should make your crepes first. That would make sense. Whisk all the stuff except for the butter in a bowl until itâs smooth. Technically youâre supposed to let crepe batter rest in the fridge so it can⦠do something. But weâre not very technical around here.
2 Heat a large sauté pan on medium-high heat. Add about a teaspoon of butterâjust enough to fully coat the pan. When the butter melts, ladle in about ¼ cup of your crepe batter, then pick up the pan and rotate it in a circular fashion until the batter is evenly dispersed.
3 Let the batter cook for about 60 seconds on one side, until itâs dry on the top and golden on the bottom, then use the thinnest spatula you have to gently and carefully and not-fuck-uppedly flip it. Continue to cook for another 30 seconds on the other side, or until golden and toasty, then remove from the pan. Repeat until you have a bunch of crepes.
4 Now, for the liquored bananas: Heat a sauté pan on medium-high and add the ½ stick of butter. When it melts, add both sugars. Stir that together for about a minute, then add the banana coins.
5 This is the dangerous part, except that itâs only dangerous if youâre a dumb asshole. And youâre not a dumb asshole (fingers crossed). Pour the whiskey into the pan, then gently tip the pan towards the stoveâs flame. If you only have an electric stove, use one of those long BBQ lighters to ignite the bananas. There is going to be a large flameâdonât get scared! Thatâs just your food becoming more impressive. (If anything gets out of hand, you can just clamp a lid down on the pot to suffocate the flame. Do NOT throw water on it unless youâre trying to look like Aaron Eckhart in The Dark Knight for the rest of your life.) 6 When the fire naturally extinguishes itself, put together the dessert: Fold a crepe into quarters to form a little rounded triangle and pour some of those alcoholic ânanners on top.
