Tip: To make these wraps warm, you can add vegan cheese inside of them, roll them up, and bake them in the oven until the outsides are toasty and the cheese is melted inside. They can also be sauteed in an oiled frying pan for a few moments on each side.

ONION, QUINOA AND “SAUSAGE” SAUTÉ

Serves 4-6

2 tablespoons extra-virgin olive oil

1 small onion, chopped

1 garlic clove, minced

4 large vegan sausages, chopped

1 cup cooked quinoa, any type

To make this recipe even quicker, grab cooked quinoa at the store. It is usually in the rice section next to the prepared rice in a foil bag type of packaging. Doing this (rather than always making your own) cuts down on time when you find yourself super busy.

In a large frying pan or skillet, sauté onions and garlic in olive oil on medium heat until fragrant. Add vegan sausage and cook until browned, then add the cooked quinoa. Sauté while stirring frequently until warmed, about 12 minutes.
