Chop suey may sound Chinese, but it actually doesn’t exist as a dish in China. Rather, it was invented by Chinese Americans in the nineteenth century. The dish includes small pieces of meat or fish, bean sprouts, onions, and other vegetables cooked together and served over rice.

Pork Chops and Potatoes

This one-pot meal combines the rich flavors of pork, garlic, nutmeg, and white wine for a fast and easy dinner with just one pot to wash afterward.

4 (5-oz.) boneless pork chops

1 tsp. kosher salt

1 tsp. freshly ground black pepper

2 TB. canola or vegetable oil

2 cups Homemade Chicken Stock

(recipe in Chapter 9)

3 cloves garlic, minced

3 medium red or Yukon Gold pota-

toes, peeled and thinly sliced

1 large white or yellow onion,

thinly sliced

2 bay leaves

¾ tsp. ground nutmeg

¾ tsp. dried sage

¾ cup dry white wine
