Baked Piri-Piri tilapia with crushed potatoes

Time: 35 minutes | Amount:4 servings

Ingredients

21oz/600g small new potatoes

2 red peppers (chunky pieces)

Red wine vinegar (1 tablespoon )

extra virgin olive oil (to drizzle)

4 large pieces tilapia ( you can also use cod)

Green salad, to serve

For the Piri-Piri sauce

6 hot pickled peppers

2 garlic cloves

juice and zest from 1 lemon

1 teaspoon chili flakes

1 tbsp red wine vinegar

1 tbsp smoked paprika

2 tbsp extra virgin olive oil

How to prepare

Boil potatoes until tender. Drain and spread out on a baking tray then gently crush with a spatula.

Add the peppers and drizzle with oil and vinegar. Season and roast in a pre-heated oven for 25 minutes

Put the Ingredients for the pri-pri in the food processor and season with some salt. Process until is fine then pour it into a bowl.

Place the fish on a baking tray, add some of the sauce and season. Place into the oven and bake 10 minutes before the scheduled cooking time.

Serve with some green salad and extra sauce
