Chicken in Red Curry Sauce

1/4 cup (60 ml) coconut oil

4 to 6 chicken thighs, boned and halved

3 tablespoons (42 g) red curry paste

2 cups (475 ml) water

1 can (14 ounces/400 ml) coconut milk

1 sweet potato, cut into bite-size pieces

1/4 cup (4 g) chopped fresh cilantro

IN A LARGE SKILLET, heat the coconut oil over medium heat. Add the chicken, cover, and cook the chicken for 5 minutes. Turn the chicken and cook for another 5 minutes. Add the red curry paste, water, coconut milk, and sweet potato. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the sweet potato is tender and the sauce is thickened. Uncover, add the cilantro, and cook for 2 minutes more.
