Preheat oven to 300°F. In a food processor or a blender, grind nuts finely with 1 tablespoon sugar. Pour into a bowl. In the same appliance, grind chocolate finely. Add to nuts.

In a large bowl, using a wire whisk or an electric mixer with a whip attachment, beat egg whites until foamy. Add salt and cream of tartar and beat until soft peaks form.

Gradually beat in sugar and beat until stiff and glossy. Fold in vanilla and coffee. Sift cocoa onto egg whites, shaking it through a sieve. Fold in nuts and chocolate. Drop by rounded spoonfuls onto greased baking sheets.

Bake for 18 to 20 minutes or until lightly browned but still moist in center. Transfer to racks to cool.
