With the crunch of the cornmeal crust and kick of the Jamaican spice blend, this chicken is brimming with flavor and texture reminiscent of the much more time-consuming traditional Jamaican jerk marinade and fried chicken. If youâre like me and love a lot of spice, feel free to add more cayenne pepper to the seasoning. Or if you prefer mild flavors, omit the cayenne completely. I like the dark meat of the chickenâit stays far juicier and tastier than the white meatâbut feel free to use whichever you prefer.
