DINNER

Beef Curry

Time Commitment:

1 pound ground beef

1 onion

2 celery stalks

1 carrot

½ cup frozen peas

1½ cups uncooked rice

½ teaspoon garlic powder

¼ teaspoon ground ginger

1½ teaspoons curry powder

¼ teaspoon salt

3½ cups water

SERVINGS: 6

Heat the Dutch oven to about 375°F on coals for frying.

Add the ground beef, and chop and stir until well browned.

Dice the onion, celery, and carrot, and add to the ground beef.

Stir for 5 minutes.

Mix in the peas, garlic, ginger, and curry powder.

Stir for 2 minutes.

Stir in the rice and water, and bring to a boil.

Sprinkle salt on top, cover, and reduce heat to about 225°F for simmering.

Simmer, stirring every 15 minutes, until rice is soft—about 40 minutes.

Options: Use frozen peas and carrots, already diced. Add ¼-inch cubes of potato with the rice. Try cinnamon, cilantro, cumin, or nutmeg.

A simple one-pot meal with some interesting flavors.
