10.Add the peaches and a pinch of kosher salt to the brown sugar mixture. Continue simmering over low heat until the peaches are soft and the entire mixture thickens and darkens a bit, about 45 minutes.

11.Carefully remove the sous-vide bag from the water bath. Take the pork out of the bag, discarding the thyme. Pat the pork dry with paper towels: This will create a good sear.

12.Place a large cast-iron pan over medium-high heat. Add the oil to the hot pan and heat until it flows like water when the pan is tilted. Place the pork in the pan; you should hear sizzling the moment the pork hits the oil. Sear the pork for 1 to 2 minutes on all sides until a brown crust forms.

13.Allow the pork to rest for 10 minutes, then top with peach chutney and serve.
