How to Cook:
Wash and cut the zucchini really thin, julienne style.
Salt them and set aside for a few minutes, to eliminate the excess liquid.
Meanwhile, grate the Parmesan and smoked cheese and beat the eggs with a pinch of salt.
Mix the zucchini with the cheeses, salt and pepper to taste and about 2 oz. of breadcrumbs.
Using your hands. shape 6 cutlets and coat them with egg wash and then breadcrumbs on both sides.
Deep fry the zucchini cutlets in hot vegetable oil and serve hot.
