TOMATO AND ROCKET PESTO TARTLETS

This is a neat summer canapé idea. One slice of a ripe, full-flavoured tomato rests on a thick smear of pesto spread on a disc of pre-cooked, flattened puff pastry. Delicious finger food.
flour for dusting
375 g ready-rolled puff pastry
3-4 tbsp vegetable oil
8-10 medium vine-ripened tomatoes, peeled and thickly sliced through the circumference
FOR THE PESTO
3 tbsp pine nuts
½ tbsp cooking oil
60 g rocket or watercress leaves
2 garlic cloves, peeled and roughly chopped
7 tbsp best olive oil
3 tbsp freshly grated Parmesan
salt and freshly ground black pepper
small basil leaves to garnish
