BEEF, BEANS, AND RICE CASSEROLE

This casserole can be made with or without meat, depending on the menu. Portable and popular, it’s a good dish to take to a potluck supper.

Preheat oven to 350° F. In a large skillet over medium heat, combine beef and onion and sauté, breaking up meat with a spoon, until meat is browned and onions are tender, about 5 minutes, adding a little oil if needed. Transfer to a lightly sprayed or oiled 3-quart casserole. Add remaining ingredients except cheese and mix well.

Bake, covered, for about 1 hour. Uncover and sprinkle cheese evenly over. Continue baking, uncovered, until bubbly and cheese is melted, about 10 minutes.

1 pound ground beef

1 cup chopped yellow onion

Vegetable oil, as needed

1 package (16 ounces) frozen lima beans, thawed

2 cans (15 ounces each) red kidney beans, drained and rinsed

1 can (15 ounces) garbanzo beans, drained and rinsed

½ cup long-grain white rice, cooked according to package directions

1 cup pitted black olives

1 cup ketchup

¼ cup firmly packed brown sugar

1 teaspoon molasses

1 teaspoon chili powder

1 tablespoon Worcestershire sauce

2 tablespoons cider vinegar

½ teaspoon salt

⅛ teaspoon freshly ground pepper

1 cup grated Cheddar cheese
