GINGER VINAIGRETTE

Marinate fish, pork, or poultry with this vinaigrette. Make extra to reserve as a salad dressing. It’s delicious.

3 tablespoons chicken broth

3 tablespoons fresh lime juice

3 tablespoons fresh ginger, grated

2 tablespoons shallots, finely chopped

1 tablespoon honey

1 tablespoon soy sauce

1 clove garlic, minced

2 tablespoons olive oil

Combine all of the ingredients in a glass jar. Shake to blend. Store in the refrigerator for up to 4 days.

Makes 1 cup
