YEAST-FREE

Elderflower Cake

Makes 1 large cake (16 to 20 slices) Preparation time 15 minutes, plus making the frosting Cooking time 35 minutes

1½ cups dairy-free margarine, plus extra for greasing

1¼ cups sugar

8 eggs

½ cup good-quality elderflower cordial, or other cordial

2¼ cups Cake Mix (see page 20)

1 cup almond meal

2 teaspoons gluten-free baking powder

elderflowers or other edible flowers, to decorate

FOR THE ELDERFLOWER FROSTING

1 recipe quantity Buttercream Frosting (see page 23)

2 tablespoons good-quality elderflower cordial, or other cordial

1 Preheat the oven to 350°F. Lightly grease two 8-inch round cake pans with margarine and line the bottoms with baking parchment.

2 To make the elderflower frosting, put the ingredients in a large mixing bowl and mix well with an electric mixer. Put in the refrigerator to chill until needed.

3 Put the margarine and sugar in a large mixing bowl and, using an electric mixer, beat together until light and fluffy. Gradually beat in the eggs, one at a time, until well mixed, then beat in the elderflower cordial.

4 In a separate large bowl, mix together the cake mix, almond meal and baking powder. Using a large metal spoon, fold the flour mixture into the egg mixture. Mix well, but take care not to overmix, then divide the batter evenly between the prepared pans and level the surfaces with the back of a spoon.

5 Bake 30 to 35 minutes until golden brown, well risen and a skewer inserted in the middle comes out clean. Remove the cakes from the oven and let cool in the pans 5 minutes. Turn out of the pans, transfer to a wire rack and let cool completely.

6 Put one of the cakes on a cake stand or plate and spread half of the frosting over it. Place the other cake on top and spread the remaining frosting over the top of the cake. Decorate with flowers.
