Radonkulous beef ribs
TOTAL TIME: 4 HOURS
12 short beef ribs, separated, membrane removed (see tip)
1 x Mexican rub (see here – leave out the sugar)
200ml American yellow mustard
100ml maple syrup
1 x BBQ sauce from Planet DAMN (see here)
Remove the ribs from the fridge to come up to room temperature. Meanwhile, set up your barbecue for the lonely island technique (see here). Place a drip tray inside the barbecue on the indirect side. Cover with the lid, adjust the vents for a nice low heat and allow to heat up like an outdoor oven – you want a temperature of around 110°C/225°F.
