Meatloaf with Olives and Herbs

Serves 6

3 slices bread, soaked in milk and squeezed

2 Roma tomatoes, seeded and diced

1 yellow onion, chopped

4 cloves garlic, chopped

2 tablespoons fresh Italian parsley, chopped

1 teaspoon fresh thyme leaves, chopped

6 green olives, chopped

6 black olives, chopped

2 slices Swiss cheese, chopped

1½ pounds ground beef

1 egg

1 tablespoon honey

Sea salt and black pepper to taste

Meatloaf often gets a bad rap, but it tastes great and is easy to make.

Preheat oven to 375°F. In mixing bowl, soak bread in water for up to 1 minute, then squeeze out liquid. In large mixing bowl, combine remaining ingredients with the bread. Mix together well and form into desired loaf shape. Place in greased loaf pan and bake for 45 to 60 minutes or until internal temperature reaches 170°F. Slice and serve.

Meatloaf Glaze

Make a glaze for your meatloaf by combining ketchup, brown sugar, and a bit of Worcestershire sauce. Coat the meatloaf during the last 15 minutes of baking and allow to bake uncovered.
