Preheat the oven to 400°F. Put the diced squash and artichoke bottoms in a baking dish with 1⁄4 cup water. Cover and bake until tender, about 45 minutes.

Heat the chicken broth and 3 cups water and set aside.

Sauté the onion in the butter until translucent, about 5 minutes. Add rice to onion and sauté for 3 minutes.

Add 1⁄2 cup broth, stirring constantly over medium-high heat until most of the liquid evaporates. Repeat with the rest of the broth in 1⁄2-cup increments. It will take about 20 minutes.
