Sweet Potato Fries

Sweet potato fries pair nicely with a big, juicy protein burger. One cup of sweet potatoes gives you more than the recommended daily allowance of vitamin A, which is a form of beta-carotene. Beta-carotene is essential for eye, skin, and heart health—our bodies need it. And vitamin A is especially important for women of reproductive age. Vitamin A is essential to a healthy menstrual cycle. Eating sweet potatoes does a body good!

Serves: 4 to 6

2 pounds sweet potatoes, skin on, cut into large wedges

¼ cup EVOO

¼ cup coconut oil

¼ cup minced fresh rosemary leaves

1 tablespoon flaky sea salt

Paleo Ranch Dressing, for serving

1. Preheat the oven to 425°F. Line a baking sheet with parchment paper and set aside.

2. In a large bowl, combine the sweet potato wedges, EVOO, and coconut oil. Mix with clean hands to coat the sweet potatoes in the oil. Place the sweet potatoes on the prepared baking sheet, spreading them in a single layer so they cook evenly.

3. Roast for 20 to 30 minutes, or until they reach a nice golden brown.

4. Top with the rosemary and sea salt, and serve with the Paleo Ranch Dressing for dipping.

SUBSTITUTION TIP: To make this recipe vegan, skip the dressing.
