The Better Burger

Broiling these burgers eliminates the need for any added fat, and the lentils make for a lighter texture without taking away from the flavor of the beef. Be sure to cook the lentils until they are very soft; otherwise they’ll have trouble staying incorporated into the burger. SERVES 6

3 tablespoons canola oil

1 medium onion, finely chopped

1 pound lean ground beef 1 cup dried green lentils, cooked until very soft, as in lentil “hummus” (Chapter 6)

1 large garlic clove, minced

2 tablespoons fresh parsley leaves, finely chopped

1 teaspoon Worcestershire sauce

1 tablespoon ketchup

1 teaspoon salt

½ teaspoon freshly ground black pepper

6 burger buns, preferably whole wheat
