Add the vegetables, cashews, and seasonings to a blender with half of the reserved water. Blend, adding a few tablespoons of water at a time until the desired consistency is achieved. Pour the vegetable puree over the macaroni and stir to incorporate. Sprinkle with paprika and serve immediately.

Baked Buffalo Cauliflower

SERVES 4

Baked, rather than fried, these little buffalo bombs are surprisingly healthy. But don’t worry—they don’t sacrifice an ounce of their junk-food roots.

¾ cup all-purpose flour

1 teaspoon paprika

2 teaspoons garlic powder

1 teaspoon salt

½ teaspoon black pepper

¾ cup milk or milk alternative

1 head of cauliflower

¼ cup buffalo sauce or hot sauce

2 tablespoons coconut oil or vegetable oil

1 tablespoon honey

Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
