1½ CUPS COOKED MACARONI
2 TABLESPOONS BUTTER
1 CUP FINELY CHOPPED PUMPKIN
1 CUP FINELY CHOPPED BACON
2 GARLIC CLOVES, MINCED
¼ CUP (40G) PLAIN FLOUR
1 BAY LEAF
2 CUPS (500ML) MILK
¼ CUP (20G) GRATED PARMESAN CHEESE, PLUS EXTRA TO SERVE
¼ CUP (25G) GRATED CHEDDAR CHEESE
4 SPRIGS OF THYME, LEAVES PICKED
Preheat the oven to 180°C. Place the cooked macaroni into a large ovenproof casserole dish (about 24cm diameter and 6cm deep). Set aside.
Melt 1 tablespoon of the butter in a saucepan on medium heat. Add the pumpkin, bacon and garlic. Sauté for 10 minutes, until the pumpkin and bacon start becoming golden. Remove from the heat and add the pumpkin mixture to the macaroni.
