A drizzle of honey adds a bright, glistening sheen to this appealing stir-fry of lamb, eggplant, and red bell peppers. Spicy fresh chiles add the perfect hit of heat and add balance to the sweetness of the honey. For this stir-fry I prefer long, slender Japanese eggplants, but in a pinch Italian globe eggplants will work. The Moroccan spice blend ras el hanout is sold in Middle Eastern shops and some supermarkets. The flavor of ras el hanout varies from brand to brand, but all are slightly sweet from allspice, cinnamon, and cardamom and pungent from black pepper, saffron, ginger, and turmeric.
1⁄4 cup extra-virgin olive oil, plus more as needed
2 small Japanese eggplants, peeled and diced (about 1⁄2 inch)
1 teaspoon, plus 1 pinch coarse salt
Freshly ground black pepper
1 red bell pepper, diced (about 1⁄2 inch)
1 small onion, diced (about 1⁄2 inch)
11⁄4 pounds ground lamb
3 garlic cloves, grated
2 teaspoons Moroccan spice blend (ras el hanout)
1 teaspoon grated ginger
3 tablespoons honey
1 to 3 teaspoons minced jalapeño or serrano chile
2 tablespoons finely chopped cilantro (optional)
