Hearty, nutritious sheet-pan dinners are more popular than ever—and for good reason. Prep work is simple, the flavors are fresh and cleanup is a breeze. Oh—and these meals make us feel warm and cozy, too!
SELECTING A SHEET PAN
Sheet pans are among the most versatile tools you can find in the kitchen. Here are some tips to help you select sheet pans and to get the most from them. Then turn the page to start cooking up simple sheet-pan dinners.
• Know the terminology. A sheet pan (called a 15x10x1-in. baking pan in our recipes) is a rimmed baking sheet. A baking (or cookie) sheet, on the other hand, does not have a rim. This gives you more surface area to fit on a few extra cookies, plus easy access to all parts of the baking sheet with a spatula.
• Sheet pans can stand in for cookie sheets, but it doesn’t always work the other way around. The rolled edges of a sheet pan give you versatility because they catch juices, prevent spills and corral things like vegetables or meats for roasting
• To find a sheet pan that will cook your food evenly and stand up to the abuse of a high-temperature oven, look for heavy-duty, warp-resistant pans.
• Heavy-gauge aluminum is a great option. It’s one of our favorites for great heat conductivity, which helps produce nice browning. Tri-ply pans (so called because they’re made of three fused layers of metal, often with an aluminum core) are another great option.
• It pays to spend a little more for quality. An inexpensive pan won’t lay flat and has a tendency to warp in the oven. Not only that, but its thin, flimsy material can easily cause the undersides of your food to burn.
• Nonstick pans are wonderful in the kitchen. But for roasting sheet-pan dinners (and making well-browned cookies), we recommend an uncoated metal surface.Nonstick can wear down and become scratched over time. It’s also not safe for the broiler or other extreme temperatures, and you might want this versatility when roasting your dinner.
• Once you find sheet pans you like, buy two at a time. That way you know they will cook ingredients and perform the same. And they’ll nest together for easy storage.
