CANDIED CARROT SOUFFLÉ

This is another one of those classic dishes you’ll find in the South. You’ll see it made up plain or sometimes with a pecan topping or even a cornflake topping. The key to a fluffy soufflé is lots of eggs and some baking powder. I whip up everything in the food processor or with a hand mixer to get it maximally smooth and fluffy.

Serve as a side to Baked Ham, Pork Roast, Roast Turkey, or Meatloaf.

SERVES 6

1 teaspoon salt

2 pounds carrots, cut into chunks

½ cup (1 stick) unsalted butter, softened

1 cup sugar

1 cup flour

2 teaspoons baking powder

1 teaspoon vanilla extract

¼ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

4 large eggs, beaten

¼ cup evaporated milk

¾ cup flour

Small marshmallows for garnish (optional)
