2 Tbsp. chopped flat-leaf parsley
600 g/1 lb. 5 oz. top sirloin steak about 2.5 cm/1¼ in thick
1 Tbsp. chopped rosemary
2 Tbsp. chopped oregano
3 cloves garlic, finely chopped
½ tsp sea salt
Black pepper
1 Tbsp. sweet Spanish paprika
3 Tbsp. red wine vinegar
Directions:
Heat the olive oil in a med-sized saucepan till hot. Remove & set aside. Add in the remaining, except for the steak, stir, & leave at room temperature to cool and infuse for 1 hour.
Pour 1/4 of marinade into a bowl & add the steak. Keep aside the remaining marinade. Cover & refrigerate for 1 hr. Remove & leave at room temp. for 30 mins.
Preheat the barbecue or griddle pan to very hot and cook the steak for 2 minutes on each side for medium-rare. Move the steak to a board & cover with foil. Rest for 5 mins & then slice. Serve with the reserved marinade.
