Smoked BBQ Korean Chicken Wings

Ingredients:

For brine:

● 1 quart water

● ¼ cup sugar

● ¼ head garlic, sliced

● 5 black peppercorns

● ½ cup sea salt

● ½ lemon

● 2 sprigs thyme

For wings:

● 1 tablespoon olive oil

● 1 ½ pounds chicken wings

For sauce:

● ¼ cup gochujang paste

● 3 tablespoons honey

● 1 tablespoon lime juice

● 2 tablespoons butter, melted

● ½ tablespoon grated ginger

● ¼ cup soy sauce

● 1 tablespoon rice wine vinegar

● 1 tablespoon sesame oil

● 2 cloves garlic, minced

To garnish:

● 1 green onion, thinly sliced

● 3 tablespoons sesame seeds

Directions:

Pour water into a saucepan. Add salt and sugar and heat over high flame. Stir often until sugar and salt dissolve completely.

When the brine solution begins to boil, turn off the heat. Add lemon, thyme, garlic, and peppercorns and stir.

Let it cool completely. Transfer the brine into a container. Drop the chicken wings into the container. Cover the container and keep it refrigerated for 4 – 8 hours.

Take out the chicken wings from the brine and dry them by patting them with paper towels.

Brush oil over the wings.

Set up your smoker and preheat it to 275°F. Place the chicken in the smoker on the grill grate, and smoke the chicken wings for 30 minutes. Add wood chunks or wood chips when required (follow the manufacturer’s instructions on how to use the wood chips). See that the temperature of the smoker is maintained between 250°F and 275°F.

Next, set the smoker's temperature to 375°F and cook for an additional 50 – 60 minutes or until the internal temperature of the chicken shows around 170°F to 175°F.

Meanwhile, make the sauce: For this, combine gochujang paste, honey, lime juice, butter, ginger, soy sauce, vinegar, sesame oil, and garlic in a saucepan. Heat the mixture over medium flame and let it come to a simmer. Turn off the heat.

Add wings into the sauce. Toss well. Add green onion and sesame seeds and toss well.

Serve immediately.
