Chapter 5- Great Tasting Pork Slow Cooker Recipes
Pork Loin Roast
Pork loin roast cooked in a slow cooker makes it tender while retaining all the juices that make it so flavorful. Pork has to be cooked thoroughly, so make sure you allow plenty of time so the roast is cooked all the way through.
Rinse off a 3 to 4 pound roast, leaving any fat on the outside in place, and pat the roast dry. Cut slit pockets every few inches all around the roast and insert a small pat of butter and about half a clove of garlic into each pocket; Mix together 1 tablespoon salt with 1 tsp. pepper and 1 tsp. ground crushed rosemary. Rub this mixture on the outside of the roast. If this doesn't cover the entire roast, mix together a little more and cover the whole exterior of the roast.
Place a layer of sliced unpeeled apples (thick slices or quarters) or sliced or quartered, unpeeled raw sweet potatoes or baking potatoes in the bottom of your slow cooker. These will serve as a baking rack, and at the same time they will be flavored by the juices from the pork, making a flavorful side dish.
Put the roast on the apples or potatoes, cover and let cook on the low setting for 8 to 12 hours, or until it registers 155 degrees on an instant-read meat thermometer.
Barbecued Spare Ribs
Recipe requires 4 pounds meaty spareribs cut into serving pieces, 2 tsp. salt, 1 tsp. celery seed, 1/4 tsp. ground pepper, 1 tsp. chili powder, 1 c. catsup, 2 T. brown sugar, 1/4 c. vinegar, 3 or 4 drops Tabasco sauce, 1/4 c. Worcestershire sauce
If ribs contain much fat, brown them first on a broiler pan with rack in your oven for 15 minutes, then drain well. If they appear lean, rinse the ribs and pat them dry. Coat the ribs thoroughly with the mixture of the dry ingredients (salt, pepper, chili powder, celery seed and brown sugar). Place the ribs in the slow cooker. Mix the remaining ingredients together and pour over the ribs, making sure they are well-coated with the sauce. Cover and let cook for four to six hours on high setting or eight to ten hours on low setting.
Baked Ham with Cola
Recipe requires 4 pounds precooked ham, 3 to 4 pound pre-cooked ham, 1 tsp. horseradish (prepared), ½ a cup sugar (brown), ¼ cup cola, such as Coke, Pepsi or generic store brand cola,1 tsp. mustard (dry)
Mix together the brown sugar, horseradish and dry mustard, then add some cola to prepare a thick paste. Set aside the rest of the cola for the time being. Rub this paste all over the outside of the ham. Place the ham in the Crockpot then pour the remaining cola over it. Cover and set the slow cooker to the high setting. Cook for two to three hours, since the ham is pre-cooked. However, if you want the ham to cook while you are away for the day, it will be fine to cook it on the low setting for six to ten hours.
