Basic Bean Soup

1 (16-ounce) bag dried mixed beans, or 2 1/4 cups cooked beans
1 (14.5-ounce) can diced tomatoes, with juice
6 cups vegetable broth
2 cups peeled and finely diced carrots
1 1/2 cups finely diced celery
1 cup peeled and finely chopped onions
2 tablespoons tomato paste
1 teaspoon Italian seasoning
1/2 teaspoon ground black pepper
1 teaspoon kosher salt
1. If using dried beans, soak them according to package directions. Rinse and place in a 4-quart or larger slow cooker.
2. Add remaining ingredients to the slow cooker.
3. Cover and cook on high for 5–6 hours or on low for 10–12 hours until the beans are tender.
