BAKED SKILLET APPLES

One of the joys of fall is welcoming fresh, local apples, and apples and skillets go hand in hand. If you think back on our country’s history and the wealth of apple recipes that the generations before us made in their skillets—apple butter and apple stack cake come to mind—you’ll see the connection. Here is a very lazy method for baking apples in a skillet. Once you have the apples prepped, the oven does most of the work. You will need to check to make sure a little water stays in the bottom of the skillet to keep the apples from sticking and to protect the “sauce” that accumulates in the skillet as the apples, spices, butter, and sugar cook down and caramelize. Serve as a side dish to roasts or as dessert with a scoop of vanilla ice cream or yogurt.
