Is it just me, or did childhood cartoons totally ruin Brussels sprouts for you? I wasn’t a picky kid, by any means, but I always avoided them because of the moans and complaints my favorite animated characters would give every time a grouchy old lunch lady ladled them onto their plate. Thank goodness I finally came to my senses and gave them a try!

Now, Brussels sprouts can be bland and soggy, especially if you boil them or buy them frozen. However, when you use fresh sprouts and roast them to crunchy perfection? I could snack on that all day, every day. Here I coat them in a simple combination of smoked paprika, maple syrup, and tamari for some smoky, sweet, and savory goodness. Even if your air fryer has a nonstick basket, I recommend lining it with a small piece of parchment paper to prevent sticking. I’ve also provided an oven option for this recipe, but I will note that the air fryer crisps up this cruciferous veggie more evenly—and in almost half the time!

3 cups (330 g) Brussels sprouts

1 tablespoon tamari

1 tablespoon maple syrup

¼ teaspoon smoked paprika

¼ teaspoon pink Himalayan salt

1. Line the basket of an air fryer with parchment paper. Wash, trim, and cut the Brussels sprouts in half. Whisk the tamari, maple syrup, smoked paprika, and salt together in a medium bowl, then add the Brussels sprouts. Toss until evenly coated, then transfer to the air fryer.

2. Bake at 400°F (205°C) for 17 to 20 minutes, removing the basket to shake the sprouts every 5 minutes. Serve immediately.
