‘Cajun’ Eggplant Appetizer

Cajun is a powerful spice but when added to grilled eggplant, it provides the perfect balance.

Serves: 4

Time: 20 mins.

Ingredients:

lime juice (2 tablespoons)

Cajun seasoning (3 teaspoons)

Eggplants (2 small, cut into slices (1/2 inch))

olive oil (1/4 cup)

Directions:

1. Coat the eggplant slices with the oil, lemon juice, and Cajun seasoning.

2. Next arrange Electric grill, over your kitchen platform, then open the top lid. Evenly arrange the grill grate then close the top lid.

3. Press the “GRILL” function then select the “MED” grill function. Adjust timer to approx., 10 minutes then press “START/STOP” function. Electric grill should start to pre-heat.

4. Once Electric grill begins to beep, it is fully functional and preheated After you hear a beep, open the top lid.

5. Arrange the eggplant slices over the grill grate.

6. Close the top lid and cook for 5 minutes. Now open the top lid, flip the eggplant slices.

7. Close the top lid and cook for 5 more minutes. Divide into serving plates. Serve warm.
