Every fruit-dessert book needs a grand cake, and this is a beaut. What I especially love about this cake is how easy it is to put together. Use blackberries and any other stone fruit you can find at the time. You will get plenty of oohs and aahs serving this at the table. For a completely adult dessert, add some apricot brandy to the apricot glaze.

Makes 8 to 12 servings

1 recipe Classic White Cake (recipe follows)

For the blackberry and stone fruit glaze:

2 cups (454 g) apricot jam

¾ cup (170 g) water

3 cups (430 g) blackberries

3 cups (430 g) sliced stone fruit, such as apricots, nectarines, or plums
