POTATO SALAD

This old standby can be given a fresh twist with some interesting ingredients. The smoked tempeh gives the salad depth without the additional cholesterol that bacon might.

4 medium red potatoes

1 apple, chopped

1 tablespoon onion, minced

3 strips smoked tempeh, chopped

1 tablespoon salad olives, chopped

ΒΌ cup mayonnaise

2 tablespoons cilantro, minced

1. Dice the potatoes and place them in a steaming basket. Bring a pot of water to a boil, set the basket over the pot, and steam the potatoes for 20 minutes, or until they are soft when pierced with a fork.

2. Meanwhile, place the apple, onion, tempeh, and olives in a mixing bowl. Add the mayonnaise and mix well.

3. When the potatoes are done, add them to the mixing bowl. Toss the mixture carefully but thoroughly to combine. If you have the time, let the salad sit in the refrigerator for an hour to let the flavors mingle.

4. When you are ready to serve, place the salad in a serving bowl and sprinkle the cilantro over the top.
